Chef's/paring duo using Damascus core steel by @50.50forge and dyed/stabilized Maple burl from @galleryhardwoods
Steel has 1095 cladding, low layer core is 15N20 & 1095. Blades are satin finish and 1095 shows hamon over Damascus core.
Blades are ~.140" thick at spine. Spines are fully rounded, chef's choil is also rounded.
Chef's: 9", ground very high with moderate distal taper. Balances just forward of choil. Good balance for a long blade with plenty of heft at the spine, 11.2ounces. More nimble than numbers suggest.
Paring: 4", ground very high with generous distal taper. 4.2 ounces.
