Chef's/Paring duo
Chef's: Intended for general use kitchen shenanigans. Thin, light and very nimble...not a one trick pony slicer. Way lighter than it looks. Balanced right at pinch. Choil/spine rounded.
Chef's Blade: 9" of crushed Ws Damascus (CruForgeV & 15N20), .120" at spine. Moderate distal taper, ground high, relatively thin, but not inappropriate for the alloys in the Damascus.
Paring Blade: 4" of the same Damascus.
Blade is ground very high with decent distal taper. Very light and nimble with good positioning for those that want their paring knife to actually be capable of paring/peeling work versus the steak or utility tasks most get relegated to.
Handles: dyed and stabilized spaghetti oak with a ferrule of shredded carbon fiber and vintage rag Micarta from a 1950s era caster with G10 spacer.
